Our main ingredient is time.

 

In fact, our dough, made with natural sourdough, is fermented for at least 48 hours.
It is therefore lighter and more digestible, because the sourdough has time to assimilate the gluten.

 

We pay particular attention to the origin of our ingredients.

 

Our Fior di Latte mozzarella is made in Naples and our sauce is made from organic, Italian tomatoes, picked ripe. Our Guanciale with pepper comes from Bussetto in the Parma region.
